Today we took the first of our courgettes from the L8LS plot.
Here is a simple salad recipe with all home grown ingredients
Courgette, Mint and Rocket Salad
Arrange 2 handfuls of rocket onto a large platter.
Peel 2 courgettes into long ribbons with a potato peeler and place on top of rocket.
Scatter 12 mint leaves over the top.
Drizzle over your favourite dressing.
We added some feta cheese to ours but you can also add halloumi.
